Pour the water into a pot over medium-high heat.
Add the onion and cook for about 10 minutes.
Add in the tomatoes and cook until the tomatoes are soft.
Add all of the vegetables, and cook just until they’re tender.
Add a little water if necessary, and add in the rice.
Cook for about 8 minutes, stirring occasionally, until rice is cooked through.
Remove from heat.
Pour in the cooked pasta, and season with salt and black pepper.
Cook until the pasta is tender.
Set the slow cooker to low, and when the pasta has cooked through, remove the lid.
Pour a little of the water back into the slow cooker and add your chicken broth.
Cook on high for 10 minutes, or until your chicken is cooked and bubbly.
Stir in your cheese, cheddar, and pepper, and pour the remaining broth back into your slow pot.
Bring the pot to a boil, then lower the heat to low and simmer for about 20 minutes.
Remove the lid, and turn off the heat.
Set a timer for 15 minutes, then remove the pasta from the slow pot and drain on paper towels.
Remove any excess liquid.
You’ll want some left over broth, and the chicken, so make sure it’s plenty warm before serving.
